Happy Birthday Kenya and Brunch

This post has been in my drafts for ages. Apologies for the delay.

Wednesday, 12th December was a public holiday here in Kenya, don’t we always look forward to holidays? Wa!! For me holiday translates to sleeping in. If you know me, you will definitely agree to fact that I love sleeping or rather I’m not a fan of waking up very early. The funny thing is, it’s not like I sleep in till very late, my version of sleeping in is waking up at 8 am. Yeah!!!

Since, I never get to wake up early enough during work days our breakfast is normally not so elaborate, even the times I’ve served pancakes , I usually make them the night before. So as to revenge our lack of proper breakfast, I decided to make a breakfast for champions during Kenya’s 49th birthday. Considering, there was quite an amount of housework to be done it ended up being brunch.

For brunch, I served;

Bacon, Brawn and Tomato Cheese Sandwich

Sausages

Parsley home fries

Bacon, Brawn and Tomato Cheese Sandwich;

Ingredients:

8 slices of brown barrel bread

2 slices of brawn, cut in quarters

2 rashers of bacon

1 white onion sliced

1 tomato sliced

Apricot jam – or whatever kind of jam you have on hand or even honey

Mozzarella cheese pieces

Butter

I started by frying the bacon. Since bacon is already fatty, I try not to use any oil in frying it.

Next toasting the bread. I applied butter on one side of the bread then into the pan they go.

Fry the onions. I added just a tablespoon of oil into the pan.

Side Note: I don’t like accumulating dishes, you’ll notice that I’m using the same pan.

I fried till translucent then I set them aside.

Now to assemble the sandwich.

I applied some apricot jam on 4 slices of the toasted bread.

On the other four slices, I put the mozzarella cheese pieces then I popped them in the microwave for one minute to get the cheese melting.

On the cheesy side, I added the brawn.

Add the tomato slices.

Finally on the other slices with the jam, pile on the onions and the bacon.

Sausages;

Simply fry the sausages.

Parsley home fries;

Ingredients:

2 tbsp dried parsley

1 tbsp vegetable oil

Salt to taste

Before you start thinking I was cooking up potatoes in the morning, let me mention that they were leftover roast potatoes. The previous night we had had dinner at Green View Restaurant and boy don’t they serve a lot of food. We had some packed for us, since we were beyond full. As I was making this brunch I decided to spice up the potatoes.

In the same pan, heat some oil. Add the potatoes, parsley and salt. Keep turning to ensure they don’t burn. Cook until hot and crispy.

This was quite a meal. Delicious and filling.

I’m already looking forward to the next holiday, March 4th.

Pulled Chicken Sandwiches

What do you do when you just have one chicken leg in the freezer but you have two mouths to feed?

Simple: Make chicken soup for hubby then shred the chicken to make sandwiches 🙂

Ingredients:

Pre cooked chicken leg – I had boiled it in water with onions, garlic and ginger

3 brown bread buns halved

2 tomatoes sliced

1 cucumber sliced

1 garlic clove halved

Mozzarella cheese slices

Tomato sauce

Margarine

This sandwich is pretty simple to do and gets ready in under 15 minutes, well if you had pre-cooked the chicken.

Start by pulling the chicken meat from the bone, hence pulled chicken.

Tada, chicken shreds.

Now, prepare the buns to get ready to assemble the sandwich.

Apply margarine on both halves, then toast them in a hot skillet for about 3 minutes or until they are crispy.

Rub the garlic halves on the crispy side to just give the bread a light garlic taste.

Now, we are ready to assemble.

Start by putting the cheese slices on one half.

Microwave for about 30 seconds to melt the cheese.

Pile on the remaining ingredients.

Add the tomatoes.

Add the chicken shreds.

Finally top off with the cucumber, then put the tomato sauce. In case you have mayonnaise you can also put that.

Dinner is served.

Lunch: Sandwich and Fruit Yoghurt

Didn’t have leftover food from yesterday night because we had take out. Since I’m trying to keep off fries this is what I made for lunch, while at work.

Vanilla flavoured yoghurt.
Fruit pieces: Strawberries and Grapes (seeded)

I carried the fruits from home.

Plus I carried some slices of bread, beef brawn slices, a tomato, cucumber and some mozzarella chunks for the sandwich.

Brown sliced bread,beef brawn slices, cucumber slices, tomato slices and some mozzarella.
Pop in the microwave for a few seconds just to get the cheese melting. Drizzle some tomato sauce and enjoy.

Verdict:

Delicious.

Try making this for a quick and easy lunch, while at work. It’s very satisfying, I can guarantee that.

Tomato, Cucumber and Mozzarella Sandwich

I guess by now you guys have noticed the way I love making sandwiches. I think they are pretty easy to do plus you can basically use anything you have on hand as long as you have bread :-D.

I prepared to for breakfast yesterday. I still had some buns from earlier this week.

Ingredients:

1 tomato sliced

1/2 cucumber sliced

Mozzarella cheese

3 buns halved

Salt and black pepper to taste. (though I forgot to add these)

*in case you are using more than 3 buns, add more tomato and cucumber.

Start by topping one half of the buns with the tomato slices.

Then add the cucumber slices.

At this point season with salt and pepper.

Finally top it off with some cheese chunks.

I think it’s just me but I like warming sandwiches, I feel they taste much better.

So I popped mine in the microwave for 30 seconds.

Did I mention that sandwiches make great snacks for picnics? Also good for lunch. 

Avocado and Brawn Sandwich

I received an SMS from my mother on Sunday informing me that she had some ripe avocados and she wanted me to go for some.

Since I got married, I usually get such texts from her, telling me to go for various goodies of which I’m very grateful.Since my hubby loves avocados so he was more than eager to take me to pick them :-).

I love putting avocados on bread since not only do they have good fats the unsaturated kind, they are also pretty filling.

So for breakfast sometime this week I thought of making something pretty quick and easy with some buns I’d bought from the supermarket. The good thing about this sandwich is that it takes a record 5 minutes or less to prepare #WIN.

Half the avocado and remove the pith. Half the buns.

Top the half of each bun with some avocado.

At this point it’s good to eat.

However, I decided to add some slices of brawn just to spice things up 🙂

Sliced pork brawn

Breakfast is served.

Brawn and Sausage Cheese Sandwich

Another simple sandwich that is fit for breakfast or a light lunch.

The ingredients are pretty simple.

Slices of bread

Honey

2 beef/pork brawn slices

2 sausages fried

Margarine/butter

Cheese slices – I used mozzarella

Start by toasting the bread, still no toaster so I did it the skillet way. On a hot skillet add your butter/margarine then add the bread and toast.

Fry the sausage and set aside.

Drizzle honey over your bread, toasted side down.

Then add the brawn and cheese slices

Put the bread in the microwave for about 1 minute or until the cheese melts.

Half the sausages then cut then lengthwise and add them.Put the other slice of bread.

Serve.

Enjoy

Verdict:

Delicious, sweet cause of the honey and savoury.

Easy as …

Since I’m a working wife, at times I wake up pretty late and in a hurry so I never get time to prepare elaborate breakfasts. On such occasions the sandwich maker is my best friend. It was no different on Tuesday morning, getting out of bed was a struggle plus I was nursing a cold *sniff sniff*. I even felt like skipping work but I fought the urge.

I thought of just applying peanut butter on the bread but on opening the fridge, I found some leftover veggies so I decided to make sandwiches.

The ingredients are pretty easy, slices of bread and whatever veggies you have left over.

Then apply on the bread

Then place them in the sandwich maker.

There you have it, easy breakfast, no fuss.

Verdict:

Pretty crunchy and tasty, though I think I’ll apply margarine on the bread next time at least for the bread to be a bit moist.
