Red Velvet Cupcakes and Cake

I love baking!!!  That said, I was a bit scared of baking a red velvet anything but over this past weekend I decided to face my fears. I googled several recipes and decided on a mixture of some.

Ingredients:

For the cake;

2 1/2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon salt

2 tablespoons unsweetened cocoa powder

1/4 teaspoon strawberry red food colour

1/2 cup margarine

1 1/2 cups sugar

2 eggs

1 teaspoon vanilla essence

1 cup buttermilk

1 teaspoon white vinegar

1 teaspoon baking soda

For the frosting;

Puratos – non dairy whipping cream used here

Sprinkles

In a bowl, sift the flour, baking powder and salt. Then set aside.

In a small bowl mix the cocoa powder and the food colouring and set aside.

Using a wooden spoon or a mixer beat margarine and sugar in a bowl. Beat in eggs one at a time.

Beat in the vanilla essence and the cocoa and food colour mixture.

Add a third of the flour mixture, then beat in half of the buttermilk.

Beat in another third of the flour and the second half of the buttermilk. End with the last third of the flour mixture.

In a small bowl, mix vinegar and baking soda, it will fizz. Add the vinegar mixture to the cake batter and stir well to combine.

Pre heat the oven, 370°F.

Line your cupcake tin with some muffin liners.

Fill about 3/4 way.

The recipe said to bake for 20-22 minutes but mine took about 15 minutes to bake.

For the remaining batter I decided to bake a cake.

For the frosting, nothing fancy since it was just for our consumption.

Spread some whipping on one half and sprinkle some diced strawberries.

Layer the other half and cover with the remaining whipping cream.

For the cupcakes, I just dipped them in the frosting then sprinkled over some sprinkles 🙂

I would like to mention that normally the frosting on red velvet cakes or cupcakes is cream cheese frosting not whipping cream. I didn’t have any cream cheese and honestly I’m still scared of making some O-o plus have you seen the cost of cream cheese? Jeeze!!

The cake is/was delicious.

Gram Flour Fish Fingers

I bought some gram flour a while back so that I could prepare some bhajias. Since then, I haven’t cooked bhajias again and I feared my flour would go to waste. I started brainstorming on other ways I could use the flour.

Since, I love making fish fingers and I always coat them with flour, I thought of substituting the flour with the gram flour and boy!!! Need I say more, I have a new way of making fish fingers.

Ingredients:

1 1/2 fish fillets cut into finger sizes

1 cup gram flour

1 cup warm water – cold will work perfectly well too

2 tbsp fish masala

1 tbsp coriander powder

1 tsp salt

1 tsp baking powder

1/8 tsp black pepper

4 cloves of garlic, minced

1 tsp ginger, minced

A handful of dhania/coriander/cilantro/parsley finely chopped

Oil for shallow frying – I normally use sunflower oil

In a bowl add in all the dry ingredients, except the dhania and fish.

Mix them, then add the water slowly till you get your desired consistency. I used the whole cup. The paste was the right consistency. Then add the chopped dhania.

As for the fish, remember to salt lightly before dipping them into the paste.

And we are ready to cook.

Start by heating your oil in a pan. As the oil is heating, put the first batch of the fish in the paste.

Cook on each side for 3-5 minutes or until golden brown.

Drain on a paper towel covered plate.

To be honest, these were the most delicious fish fingers I have ever made. I have to say, it must be the gram flour.

PS: You can coat with breadcrumbs after dipping the fish in the paste.

Choc-nut cookies

I’d missed eating cookies and since I had some chocolate chips and roasted groundnuts on hand I thought why not? Plus hubby being the cheer leader that he is encouraged me 🙂

Ingredients

2 cups baking flour

6 teaspoons of cocoa powder

1 tablespoon of baking powder

1/2 teaspoon of instant coffee powder

1/4 teaspoon of cinnamon powder

1/8 teaspoon of salt

3/4 cup sugar

3/4 cup margarine

Zest of one lemon

3 eggs

1 tablespoon of vanilla essence

Chocolate chips

A handful of roasted groundnuts, peeled.

Start by pre heating your oven at 350 degrees.

In a bowl mix the sugar and margarine and using a wooden spoon or electric mixture cream.

In a separate bowl break the eggs, add vanilla essence and the lemon zest.

One by one add the egg mixture into the creamed sugar and margarine, stirring after each addition.

In a bowl mix all the dry ingredients

Fold in the flour mixture into the wet ingredients in three parts,

Then add the chocolate chips and groundnuts.

Line your baking sheet with some parchment paper, then using a teaspoon spoon the batter on to the tray. Remember to space them, since they’ll spread out while baking.

Bake in the oven for 8 to 10 minutes or until they are hard on the edges and still soft at the middle.

Allow them to cool completely and you’ll notice they harden.

Verdict:

Tasty and chewy too.

The nuts felt a tad soggy though, I wonder how I can remedy that. Put them in while raw?

This recipe yielded 40 cookies.

Fruit Pancakes

My love for pancakes always drives me to try out new ways to make them even sweeter. Some weeks back on a weekday, I prepared these pancakes, I have to say that was pretty ambitious of me since it was a work day #superwoman (as if).

The recipe is just like for the cinnamon pancakes, except instead of the cinnamon I used apples, sultanas and some lemon zest.

So in a bowl,mix all your dry ingredients, flour,baking powder,sugar and lemon zest.

Then fold in the chopped apples and sultanas.

In a separate jug mix the wet, eggs,vanilla essence.

Make a well in the dry ingredients then pour in the wet ingredients. The amount of water to put is dependent on the consistency of batter desired. I like when my batter is a bit viscous.

On a hot skillet heat some oil and you are ready to fry the pancakes.

Serve while hot, sprinkled with some honey or your favourite syrup.

Verdict:

Very sweet. I even carried some for lunch that day and they were pretty filling.

Hubby suggested that the next time I should try grating the apples instead.

If I could do it over again:

Grate the apples 🙂 .

These pancakes can be easily prepared for a light dinner or brunch.
