Fried Chicken Strips

Easy as … fried chicken strips 🙂

At times I’m never too sure of what to cook so I normally settle on the star of the meal then I just go with the flow and during those moments I end up ‘creating’ my own recipes. This being one of them. The first time I made this I didn’t have any intention of posting on the blog but after positive reviews of photos I had posted on my facebook, I decided to make it again.

The simplicity of this recipe is in the minimal ingredients needed. I know some of you may wonder how one doesn’t cook with onions, but it happens and it’s something I do often. Anyway, let’s get to cooking 🙂

Ingredients:

2 boneless chicken breasts cut in strips

1 large red bell pepper sliced lengthwise then in half

Dried oregano leaves

Salt and black pepper to taste

1 tablespoon vegetable oil

The chicken strips are cut easily when the chicken is between frozen and thawed.

In a shallow pan or skillet heat the oil. Then throw in the chicken strips.

Excuse the pan, it’s quite old, one of hubby’s when he was still a bachelor 🙂

Cook the chicken for about 15 minutes. Season with salt and some black pepper.

Then add the bell peppers and sprinkle over the oregano about a tablespoon will do.

Let the peppers cook down, as they cook the chicken will also brown up a bit.

Serve and enjoy.

Guest Post: Chicken salad

A guest post from my pal Noni on what to do with leftover chicken.

Ingredients:

iceberg lettuce
1/2 a cucumber sliced
1 red onion sliced
1 carrot grated

1/2 teaspoon of black pepper

1/4 teaspoon of chicken masala

Dressing

Honey & mustard dressing

In a bowl, shred your lettuce. I used  my hands

Add the carrots,onions and cucumber

already looks yummy

Get your leftover chicken then shred it.

 In a small pan, re fry the chicken strips season with chicken masala and black pepper.

I cooked the strips for about 5 minutes.

Once they are done, we are ready to finish the salad.

Add the chicken to the salad and toss.

Top off with your desired dressing and enjoy.

Quick Fix: Sweet and Savoury rice

Yet another meal made from leftover rice. I like working with leftover rice since there are a variety of dishes that one can whip up in under 30 minutes.

I had bought a whole broiler chicken some time back, I decided to fillet the breast and keep them for later. With the rice leftover, I got a brilliant idea to combine it with the chicken, something like a chicken fried rice…:-D

Ingredients:

Chicken tenders cut into strips

Leftover rice

Dried rosemary and oregano leaves

Pineapple cut into chunks

Black pepper

Salt

Oil for frying

In a skillet add in your oil, then through in the chicken strips together with the dried herbs, salt and pepper.

Keep stirring to avoid it sticking to the pan.

No need to cook them for long, since the strips are pretty thin , ensure they are well spread out on the pan and within no time they are done.

The yellow colour in the rice is turmeric. I had steamed the rice with some turmeric and parsley, more flavour.

You just want the rice to get heated then add in the pineapple chunks , stir and serve.

Verdict:

First of all, hubby couldn’t believe dinner was done in under 30 minutes.

He loved it. From eating pizzas I have realised that oregano combines well with pineapple. The food was both sweet and savoury. I’ll definitely try this again.

Who knew one can prepare a complete meal without onions?
